So I looked through the Github notes and didn't see anything on this; Were there any changes to timing judgement difficulty? Coming from 5.0.12(ish), the judge 7 feels considerably more forgiving in the 5.1 Beta.

Not sure what you mean. I manually set the Judge to 7 and it feels more forgiving than SM5 Judge 7. I'm giving Judge 8 a try but it feels several notches more difficult.
