Basically, you have to find songs online and put them in a special folder, then you can play them in Stepmania. There's a key mapping screen if you don't want to use the arrow keys, or need to map a dance pad.
You can read Docs/Userdocs/sm5_beginner.txt for more details. If there's anything it doesn't cover, ask questions.
