Which setting changes 'ms' display back to 'perfect, good, bad' etc.?

Normally when you hit a step, depending on your accuracy you get 'perfect, good, bad' etc.

As you can see, the ms is showing up instead.
Which setting changes this back to displaying 'perfect, good, bad' etc.?

That's the Pro Timing option.

Ah right. Thanks for letting me know, but how do you turn it off? I can't find it in the options menu

It's at the bottom of the player options screen:
