can anyone tell me how to change the music wheel from viewing all songs instead of in groups?

Viewing all songs at once? I don't think you can do that other than that "most played" ordering (shift+enter I believe).

In StepMania 5, you may view songs in a somewhat linear list by using the "Preferred" Sort if it is available. You can sort this way by holding Select ( / Key by default ) + Start ( Enter by default ), or using the ↑↓↑↓ shortcut.
